This traditional method sparkling rosé, crafted by students from Plumpton College, was aged on lees for two years. Toasty cherry, creamy strawberry, and rose petal on the nose. Frothy mousse with a vibrant zing on the palate, with burnt sugar, cherry candy, ripe strawberry jam, red apple peel backed by a piercing, steely acidity. Creamy with a touch of sweet spices on the finish.
